Ingredients:
- 1 pound (450g) fresh razor clams, cleaned and rinsed
- 4 tablespoons (60g) unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- Juice of 1 lemon
- Salt and pepper, to taste
- Fresh lemon wedges (optional)
Instructions:
- Rinse razor clams in cold water; soak briefly to remove any sand. Drain and set aside.
- In a saucepan over medium heat, melt the butter. Add minced garlic and sauté for 1-2 minutes, until fragrant. Stir in chopped parsley and lemon juice, seasoning with salt and pepper; remove from heat.
- In the same or another large pan, add a splash of water and bring to a simmer. Add razor clams, cover, and steam for about 4-5 minutes, or until they open. Discard any clams that remain closed.
- Transfer opened clams to a serving dish. Drizzle with garlic butter, and serve with lemon wedges on the side.
