Ingredients:
- 1 lb haddock fillets, boneless and skinless
- ½ tsp kosher salt
- ¼ tsp cracked black pepper
- 1 tbsp olive oil
- 4 tbsp unsalted butter, melted
- 3 cloves garlic, minced fine
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 tbsp fresh parsley, chopped
Instructions:
- Preheat your oven to 400°F (200°C) and lightly grease a 9x13 inch baking dish with olive oil.
- Pat the haddock fillets completely dry using paper towels to prevent steaming and ensure the sauce adheres.
- Arrange the fillets in a single layer in the baking dish, ensuring they aren't touching, and season both sides evenly with salt and black pepper.
- In a small bowl, whisk together the melted butter, minced garlic, lemon juice, and lemon zest.
- Spoon the garlic butter mixture over each fillet, coating every inch of the fish.
- Bake for 12–15 minutes until the fish is opaque white and the butter is bubbling at the edges.
- Broil on high for the final 60 seconds until the tops are mahogany-colored. Remove when the thickest part of the fillet flakes easily with a fork.
