Ingredients:

  • 1 lb haddock fillets, boneless and skinless
  • ½ tsp kosher salt
  • ¼ tsp cracked black pepper
  • 1 tbsp olive oil
  • 4 tbsp unsalted butter, melted
  • 3 cloves garlic, minced fine
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. Preheat your oven to 400°F (200°C) and lightly grease a 9x13 inch baking dish with olive oil.
  2. Pat the haddock fillets completely dry using paper towels to prevent steaming and ensure the sauce adheres.
  3. Arrange the fillets in a single layer in the baking dish, ensuring they aren't touching, and season both sides evenly with salt and black pepper.
  4. In a small bowl, whisk together the melted butter, minced garlic, lemon juice, and lemon zest.
  5. Spoon the garlic butter mixture over each fillet, coating every inch of the fish.
  6. Bake for 12–15 minutes until the fish is opaque white and the butter is bubbling at the edges.
  7. Broil on high for the final 60 seconds until the tops are mahogany-colored. Remove when the thickest part of the fillet flakes easily with a fork.
