Ingredients:

  • 1.5 lb jumbo shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/2 cup salted butter, melted
  • 4 cloves garlic, finely grated or pressed
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp fresh parsley, finely chopped

Instructions:

  1. Combine the melted butter, grated garlic, lemon juice, and lemon zest in a small bowl. Whisk until the mixture is uniform and set aside to allow the garlic to infuse.
  2. Pat the shrimp completely dry with paper towels to ensure a proper char. In a large bowl, toss the shrimp with olive oil, salt, and pepper.
  3. Thread 4–5 shrimp onto each skewer, leaving a tiny gap between them to ensure even heat circulation.
  4. Preheat the grill to medium-high heat. Place skewers on the grates and grill for 2–3 minutes per side until the shrimp turn opaque pink and form a slight curl.
  5. During the final 60 seconds of grilling, brush the Garlic Butter Marinade generously over the shrimp. Remove from heat immediately once the butter is bubbling and fragrant.
  6. Garnish the grilled shrimp with chopped parsley before serving.
