Ingredients:
- 1.5 lb jumbo shrimp, peeled and deveined
- 1 tbsp olive oil
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1/2 cup salted butter, melted
- 4 cloves garlic, finely grated or pressed
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 tbsp fresh parsley, finely chopped
Instructions:
- Combine the melted butter, grated garlic, lemon juice, and lemon zest in a small bowl. Whisk until the mixture is uniform and set aside to allow the garlic to infuse.
- Pat the shrimp completely dry with paper towels to ensure a proper char. In a large bowl, toss the shrimp with olive oil, salt, and pepper.
- Thread 4–5 shrimp onto each skewer, leaving a tiny gap between them to ensure even heat circulation.
- Preheat the grill to medium-high heat. Place skewers on the grates and grill for 2–3 minutes per side until the shrimp turn opaque pink and form a slight curl.
- During the final 60 seconds of grilling, brush the Garlic Butter Marinade generously over the shrimp. Remove from heat immediately once the butter is bubbling and fragrant.
- Garnish the grilled shrimp with chopped parsley before serving.
