Ingredients:

  • 3 (6 oz / 170g) Mahi Mahi fillets
  • 2 tbsp (30ml) olive oil
  • 1 tsp (6g) kosher salt
  • 1/2 tsp (3g) black pepper
  • 1/2 tsp (3g) garlic powder
  • 4 tbsp (57g) unsalted butter, melted
  • 3 cloves (9g) garlic, minced
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tbsp (4g) fresh parsley, chopped

Instructions:

  1. Pat the fillets completely dry with paper towels. Rub both sides with olive oil, then evenly season with salt, pepper, and garlic powder. Let them sit at room temperature for 10 minutes.
  2. Preheat your grill to medium-high. Place the fillets on the grates and sear undisturbed for 4–5 minutes per side until a deep, mahogany-colored crust forms.
  3. In the final 2 minutes of cooking, brush the melted garlic butter mixture generously over the top of each fillet.
  4. Remove the fish from the heat when the internal temperature reaches 135°F (57°C).
