Ingredients:

  • 2 (6-ounce/170g) cod fillets, skin on or off
  • 2 tablespoons (30ml) olive oil
  • 4 tablespoons (56g) unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup (15g) fresh parsley, chopped
  • 1 tablespoon (15ml) lemon juice
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Pat the cod fillets dry with paper towels. Season both sides generously with salt and pepper.
  2. Melt 2 tablespoons of butter in a large skillet over medium heat. Add the minced garlic and red pepper flakes (if using). Cook, stirring constantly, until fragrant (about 1 minute). Be careful not to burn the garlic!
  3. Add the olive oil to the skillet. Increase heat to medium-high. Carefully place the cod fillets in the skillet, ensuring they are not overcrowded. Sear for 3-4 minutes per side, or until the cod is golden brown and cooked through. If your cod has skin on, cook skin side down first.
  4. Reduce heat to low. Add the remaining 2 tablespoons of butter to the skillet. Once melted, spoon the garlic butter sauce over the cod fillets. Add the chopped parsley and lemon juice.
  5. Remove the cod from the skillet and serve immediately. Spoon the remaining garlic butter sauce over the fish.
