Ingredients:
- 2 (6-ounce/170g) cod fillets, skin on or off
- 2 tablespoons (30ml) olive oil
- 4 tablespoons (56g) unsalted butter
- 4 cloves garlic, minced
- 1/4 cup (15g) fresh parsley, chopped
- 1 tablespoon (15ml) lemon juice
- 1/4 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
Instructions:
- Pat the cod fillets dry with paper towels. Season both sides generously with salt and pepper.
- Melt 2 tablespoons of butter in a large skillet over medium heat. Add the minced garlic and red pepper flakes (if using). Cook, stirring constantly, until fragrant (about 1 minute). Be careful not to burn the garlic!
- Add the olive oil to the skillet. Increase heat to medium-high. Carefully place the cod fillets in the skillet, ensuring they are not overcrowded. Sear for 3-4 minutes per side, or until the cod is golden brown and cooked through. If your cod has skin on, cook skin side down first.
- Reduce heat to low. Add the remaining 2 tablespoons of butter to the skillet. Once melted, spoon the garlic butter sauce over the cod fillets. Add the chopped parsley and lemon juice.
- Remove the cod from the skillet and serve immediately. Spoon the remaining garlic butter sauce over the fish.
