Ingredients:
- 4 large eggs
- 1 tablespoon cornstarch
- Pinch of salt and pepper
- 1 pound large prawns, peeled and deveined
- 2 cloves garlic, minced
- 1 tablespoon fish sauce
- 1 teaspoon lime juice
- 1 teaspoon sugar
- 1 tablespoon fresh cilantro, chopped
- ½ cup vegetable oil
- Optional: fresh lime wedges, for garnish
Instructions:
- In a mixing bowl, combine prawns, garlic, fish sauce, lime juice, sugar, and cilantro. Marinate for 30 minutes in the refrigerator.
- In another bowl, whisk together eggs, cornstarch, salt, and pepper. Heat a non-stick pan over medium-low heat with a little oil.
- Pour in a thin layer of the egg mixture, swirling to create a net-like pattern. Cook until set and lightly golden, about 1-2 minutes. Remove and repeat for remaining mixture.
- Heat oil in the skillet over medium-high heat. Add the marinated prawns and sauté until pink and cooked through, about 2-3 minutes.
- Place a few prawns on each egg net and roll or fold to encase the prawns. Optionally, return to pan to gently crisp edges.
- Transfer to a plate, garnish with lime wedges, and enjoy warm.
