Ingredients:
- 1 lb (450 g) large prawns, peeled and deveined
- 1 cup (150 g) finely chopped mixed vegetables (carrots, bell peppers, peas)
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1 tsp (5 g) ginger paste
- 1 tsp (5 g) garam masala
- Salt to taste
- 1 tbsp olive oil
- 1 cup (120 g) all-purpose flour
- 2 large eggs
- 2 cups (200 g) breadcrumbs (preferably panko for extra crunch)
- Oil for frying
- 8 slices of soft white bread
- Fresh coriander, for garnish (optional)
Instructions:
- In a bowl, combine prawns, chopped vegetables, garlic, onion, ginger paste, garam masala, and salt. Mix well and let marinate for 15 minutes in the refrigerator.
- Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
- Take a slice of bread, trim the edges, and flatten using a rolling pin. Spoon a small amount of filling onto the flattened bread, fold over, and press gently to seal.
- Dip each sealed bread prawn into flour, then into beaten eggs, and finally coat with breadcrumbs.
- Heat oil in a frying pan over medium heat. Fry the bread prawns in batches, turning them until golden brown on all sides (approx. 2-3 minutes each). Drain on paper towels.
- Garnish with fresh coriander and serve hot.
