Ingredients:

  • 1 lb (450 g) large prawns, peeled and deveined
  • 1 cup (150 g) finely chopped mixed vegetables (carrots, bell peppers, peas)
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 tsp (5 g) ginger paste
  • 1 tsp (5 g) garam masala
  • Salt to taste
  • 1 tbsp olive oil
  • 1 cup (120 g) all-purpose flour
  • 2 large eggs
  • 2 cups (200 g) breadcrumbs (preferably panko for extra crunch)
  • Oil for frying
  • 8 slices of soft white bread
  • Fresh coriander, for garnish (optional)

Instructions:

  1. In a bowl, combine prawns, chopped vegetables, garlic, onion, ginger paste, garam masala, and salt. Mix well and let marinate for 15 minutes in the refrigerator.
  2. Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
  3. Take a slice of bread, trim the edges, and flatten using a rolling pin. Spoon a small amount of filling onto the flattened bread, fold over, and press gently to seal.
  4. Dip each sealed bread prawn into flour, then into beaten eggs, and finally coat with breadcrumbs.
  5. Heat oil in a frying pan over medium heat. Fry the bread prawns in batches, turning them until golden brown on all sides (approx. 2-3 minutes each). Drain on paper towels.
  6. Garnish with fresh coriander and serve hot.
