Ingredients:

  • 1 cup (150 g) fresh green beans, trimmed and cut into 1-inch pieces
  • 1/2 cup (75 g) all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup (120 ml) cold sparkling water
  • Vegetable oil, for frying
  • 12 oz (340 g) salmon fillet, skin removed (about two 6 oz portions)
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • Salt and pepper, to taste

Instructions:

  1. In a mixing bowl, combine flour, baking powder, garlic powder, salt, and pepper. Gradually whisk in cold sparkling water until smooth. Gently fold in chopped green beans and chill in the refrigerator for 30 minutes.
  2. Season the salmon fillets with olive oil, lemon juice, salt, and pepper. In a frying pan, heat over medium-high heat and add the salmon. Cook for 4-5 minutes on each side or until the salmon flakes easily with a fork.
  3. In a heavy-bottomed frying pan, heat vegetable oil to 350°F (175°C). Scoop generous tablespoonfuls of the bean batter into the hot oil and fry until golden brown, about 3-4 minutes per side. Remove using a slotted spoon and drain on paper towels.
  4. Plate the fried green bean fritters alongside the cooked salmon. Optional: Drizzle with additional lemon juice or your favorite dipping sauce.
