Ingredients:

  • 1 cup all-purpose flour (120g)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup cold sparkling water (120ml)
  • 1 pound white fish fillets, such as cod or tilapia (450g), cut into strips
  • Oil, for frying (such as vegetable or canola)

Instructions:

  1. Heat about 2 inches of oil in a deep frying pan over medium-high heat until it reaches 350°F (175°C).
  2. In a mixing bowl, whisk together flour, baking powder, salt, and pepper. Gradually add cold sparkling water while whisking until smooth but slightly thick.
  3. Dip each fish strip into the batter
  4. Carefully place battered fish strips into the hot oil. Fry in batches
  5. Remove fish with a slotted spatula and place on a paper towel-lined plate to drain excess oil. Serve immediately with dipping sauce.
