Ingredients:
- 1 cup all-purpose flour (120g)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup cold sparkling water (120ml)
- 1 pound white fish fillets, such as cod or tilapia (450g), cut into strips
- Oil, for frying (such as vegetable or canola)
Instructions:
- Heat about 2 inches of oil in a deep frying pan over medium-high heat until it reaches 350°F (175°C).
- In a mixing bowl, whisk together flour, baking powder, salt, and pepper. Gradually add cold sparkling water while whisking until smooth but slightly thick.
- Dip each fish strip into the batter
- Carefully place battered fish strips into the hot oil. Fry in batches
- Remove fish with a slotted spatula and place on a paper towel-lined plate to drain excess oil. Serve immediately with dipping sauce.
