Ingredients:
- 1 lb Large Shrimp (16-20 count), peeled and deveined
- 1 tbsp Sea salt
- 1 Lemon, halved
- 0.5 cup Mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp Freshly squeezed lemon juice
- 0.5 tsp Old Bay seasoning
- 0.25 tsp Freshly cracked black pepper
- 2 stalks Celery, finely diced
- 2 tbsp Red onion, minced
- 2 tbsp Fresh dill, chopped
- 1 tbsp Fresh chives, minced
Instructions:
- Bring a large pot of water to a boil with sea salt and lemon halves. Drop the shrimp into the boiling water and turn off the heat. Cook 3-5 minutes until the shrimp are opaque and curled into a 'C' shape. Immediately transfer to an ice bath for 2 minutes, then pat completely dry.
- In a large mixing bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, Old Bay seasoning, and black pepper until a smooth emulsion forms.
- Gently fold the dried shrimp, diced celery, minced onion, dill, and chives into the dressing using a spatula until evenly coated.
- Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
