- 1/2 tsp garlic powder
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
- 6 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, sliced into half-moons
- 1 large avocado, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup extra virgin olive oil
- 3 tbsp fresh lemon juice
- 1 tbsp honey
- 1 tsp Dijon mustard
- 1 clove garlic, minced
Instructions:
- In a medium bowl, toss the shrimp with olive oil, smoked paprika, garlic powder, salt, and pepper. Let them sit for 10 minutes at room temperature to ensure spices adhere.
- Heat a grill or grill pan over medium-high heat. Place shrimp in a single layer and grill for 2-3 minutes per side until opaque and charred. Remove immediately.
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion. Whisk together the vinaigrette ingredients and drizzle over the greens, tossing gently.
- Divide the dressed greens among plates and top with the warm grilled shrimp and diced avocado.
