Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp extra virgin olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 6 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, sliced into half-moons
  • 1 large avocado, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup extra virgin olive oil
  • 3 tbsp fresh lemon juice
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced

Instructions:

  1. In a medium bowl, toss the shrimp with olive oil, smoked paprika, garlic powder, salt, and pepper. Let them sit for 10 minutes at room temperature to ensure spices adhere.
  2. Heat a grill or grill pan over medium-high heat. Place shrimp in a single layer and grill for 2-3 minutes per side until opaque and charred. Remove immediately.
  3. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion. Whisk together the vinaigrette ingredients and drizzle over the greens, tossing gently.
  4. Divide the dressed greens among plates and top with the warm grilled shrimp and diced avocado.
