Ingredients:

  • 4 salmon fillets (about 6 oz / 170g each), skin on or off
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 Tablespoon Fresh Lemon Juice
  • 1 Tablespoon Fresh Dill, chopped
  • 1 Tablespoon Fresh Parsley, chopped
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Kosher or Sea Salt
  • 1/2 teaspoon freshly ground Black Pepper
  • 4 thin Lemon Slices, for topping

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a small bowl, whisk together the olive oil, lemon juice, chopped dill, parsley, garlic powder, salt, and pepper until combined to create the herb mixture.
  3. Pat the salmon fillets thoroughly dry with paper towels. Place the fillets on the prepared baking sheet.
  4. Spoon or brush the lemon-herb mixture evenly over the top surface of each salmon fillet.
  5. Top each fillet with a thin slice or two of fresh lemon, if desired.
  6. Place the baking sheet in the preheated oven and bake for 12 to 15 minutes.
  7. Check for doneness: The salmon should flake easily with a fork, or an instant-read thermometer inserted into the thickest part should register 140°F (60°C) for medium or 145°F (63°C) for fully cooked.
  8. Remove from the oven immediately and let the Oven Baked Salmon rest for 2 minutes before serving.
