Ingredients:
- 4 salmon fillets (about 6 oz / 170g each), skin on or off
- 2 Tablespoons Extra Virgin Olive Oil
- 1 Tablespoon Fresh Lemon Juice
- 1 Tablespoon Fresh Dill, chopped
- 1 Tablespoon Fresh Parsley, chopped
- 1 teaspoon Garlic Powder
- 1 teaspoon Kosher or Sea Salt
- 1/2 teaspoon freshly ground Black Pepper
- 4 thin Lemon Slices, for topping
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
- In a small bowl, whisk together the olive oil, lemon juice, chopped dill, parsley, garlic powder, salt, and pepper until combined to create the herb mixture.
- Pat the salmon fillets thoroughly dry with paper towels. Place the fillets on the prepared baking sheet.
- Spoon or brush the lemon-herb mixture evenly over the top surface of each salmon fillet.
- Top each fillet with a thin slice or two of fresh lemon, if desired.
- Place the baking sheet in the preheated oven and bake for 12 to 15 minutes.
- Check for doneness: The salmon should flake easily with a fork, or an instant-read thermometer inserted into the thickest part should register 140°F (60°C) for medium or 145°F (63°C) for fully cooked.
- Remove from the oven immediately and let the Oven Baked Salmon rest for 2 minutes before serving.
