Ingredients:
- 1.5 lbs (approx. 680g) cod fillets, about 1-inch thick, skin on or off
- 2 tablespoons (30ml) olive oil
- 1 lemon, thinly sliced
- 2 cloves garlic, minced (about 1 teaspoon)
- 1/4 cup (approx. 6g) fresh parsley, chopped
- 1/4 teaspoon dried thyme (or 1 teaspoon fresh thyme leaves)
- Salt and freshly ground black pepper, to taste
- Optional: Pinch of red pepper flakes
Instructions:
- Preheat the Oven: Get that oven roaring to 400°F (200°C).
- Prep the Cod: Pat the cod fillets dry with paper towels.
- Make the flavour bomb: In a small bowl, combine the olive oil, minced garlic, parsley, thyme, salt, and pepper (and red pepper flakes, if using).
- Assemble the Fish: Lightly grease the baking dish with olive oil. Place the cod fillets in the dish.
- Season and Layer: Spoon the garlic herb mixture evenly over the cod fillets. Top with lemon slices. Tuck some under the fillets too.
- Bake to Perfection: Bake for 15-20 minutes, or until the cod is opaque and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
- Serve and Enjoy! Gently remove the cod from the baking dish and serve immediately.
