Ingredients:
- 4 tablespoons extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh oregano
- 1 tablespoon chopped fresh mint
- 1 teaspoon dried thyme
- ½ teaspoon red pepper flakes (optional)
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
- 16 ounces block of Greek feta cheese, firm
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- Cherry tomatoes (about 16)
- Wooden or metal skewers
Instructions:
- In a mixing bowl, whisk together olive oil, lemon juice, garlic, oregano, mint, thyme, red pepper flakes (if using), salt, and pepper.
- Cut the feta into 1-inch cubes. Place the feta cubes, bell peppers, onion, and cherry tomatoes into a bowl.
- Pour the marinade over the feta and vegetables. Gently toss to coat everything evenly. Cover and refrigerate for at least 30 minutes.
- Thread the feta, bell peppers, red onion, and cherry tomatoes onto the skewers in an alternating pattern.
- Preheat your grill to medium heat or preheat the broiler. Grill: Place the skewers on the grill grates and cook for 2-3 minutes per side, or until the feta is softened and slightly browned and the vegetables are tender-crisp. Broil: Place the skewers on a baking sheet and broil for 2-3 minutes per side, watching carefully to prevent burning.
- Remove the skewers from the grill and serve immediately.
