Ingredients:

  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh oregano
  • 1 tablespoon chopped fresh mint
  • 1 teaspoon dried thyme
  • ½ teaspoon red pepper flakes (optional)
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • 16 ounces block of Greek feta cheese, firm
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into 1-inch pieces
  • Cherry tomatoes (about 16)
  • Wooden or metal skewers

Instructions:

  1. In a mixing bowl, whisk together olive oil, lemon juice, garlic, oregano, mint, thyme, red pepper flakes (if using), salt, and pepper.
  2. Cut the feta into 1-inch cubes. Place the feta cubes, bell peppers, onion, and cherry tomatoes into a bowl.
  3. Pour the marinade over the feta and vegetables. Gently toss to coat everything evenly. Cover and refrigerate for at least 30 minutes.
  4. Thread the feta, bell peppers, red onion, and cherry tomatoes onto the skewers in an alternating pattern.
  5. Preheat your grill to medium heat or preheat the broiler. Grill: Place the skewers on the grill grates and cook for 2-3 minutes per side, or until the feta is softened and slightly browned and the vegetables are tender-crisp. Broil: Place the skewers on a baking sheet and broil for 2-3 minutes per side, watching carefully to prevent burning.
  6. Remove the skewers from the grill and serve immediately.
