Ingredients:

  • 1 lb (450g) Large shrimp, peeled and deveined
  • 1 lb (450g) Sea scallops, tough side-muscle removed
  • 1 lb (450g) Halibut or Cod fillets, cut into 2-inch chunks
  • 1 tbsp (15ml) Extra virgin olive oil
  • 1/4 cup (60ml) Extra virgin olive oil
  • 3 tbsp (45ml) Freshly squeezed lemon juice
  • 4 cloves (20g) Garlic, minced
  • 1 tsp (2g) Dried oregano
  • 1/2 tsp (3g) Sea salt
  • 1/4 tsp (1g) Cracked black pepper
  • 1 tsp (5ml) Lemon zest
  • 1/4 cup (15g) Fresh parsley, chopped
  • 1 lemon, cut into wedges
  • 1 tbsp (15ml) Capers, drained

Instructions:

  1. Pat all seafood completely dry with paper towels to ensure a proper sear.
  2. In a large bowl, whisk together 1/4 cup olive oil, lemon juice, minced garlic, oregano, salt, pepper, and lemon zest.
  3. Toss the shrimp, scallops, and fish chunks into the marinade and let them sit for exactly 15 minutes at room temperature.
  4. Preheat the outdoor grill or cast-iron grill pan to high (approx 450°F / 230°C) and brush the grates with 1 tbsp of olive oil.
  5. Place the fish chunks on the grill first, searing for 3-4 minutes per side until a golden-brown crust forms.
  6. Add the shrimp and scallops to the grill, searing quickly on high heat until opaque and charred on the edges.
  7. Remove from heat and garnish the platter with chopped parsley, capers, and fresh lemon wedges.
