Ingredients:
- 1 lb (450g) Large shrimp, peeled and deveined
- 1 lb (450g) Sea scallops, tough side-muscle removed
- 1 lb (450g) Halibut or Cod fillets, cut into 2-inch chunks
- 1 tbsp (15ml) Extra virgin olive oil
- 1/4 cup (60ml) Extra virgin olive oil
- 3 tbsp (45ml) Freshly squeezed lemon juice
- 4 cloves (20g) Garlic, minced
- 1 tsp (2g) Dried oregano
- 1/2 tsp (3g) Sea salt
- 1/4 tsp (1g) Cracked black pepper
- 1 tsp (5ml) Lemon zest
- 1/4 cup (15g) Fresh parsley, chopped
- 1 lemon, cut into wedges
- 1 tbsp (15ml) Capers, drained
Instructions:
- Pat all seafood completely dry with paper towels to ensure a proper sear.
- In a large bowl, whisk together 1/4 cup olive oil, lemon juice, minced garlic, oregano, salt, pepper, and lemon zest.
- Toss the shrimp, scallops, and fish chunks into the marinade and let them sit for exactly 15 minutes at room temperature.
- Preheat the outdoor grill or cast-iron grill pan to high (approx 450°F / 230°C) and brush the grates with 1 tbsp of olive oil.
- Place the fish chunks on the grill first, searing for 3-4 minutes per side until a golden-brown crust forms.
- Add the shrimp and scallops to the grill, searing quickly on high heat until opaque and charred on the edges.
- Remove from heat and garnish the platter with chopped parsley, capers, and fresh lemon wedges.
