Ingredients:
- 1 pound large shrimp, peeled and deveined (450 g)
- 1 tablespoon lime juice (15 ml)
- 1 teaspoon garlic powder (5 g)
- Salt and pepper, to taste
- ½ cup all-purpose flour (60 g)
- 2 large eggs, beaten
- 1 cup panko breadcrumbs (100 g)
- ¾ cup unsweetened shredded coconut (75 g)
- Vegetable oil, for frying (enough to fill a deep pan to about 2 inches)
Instructions:
- In a bowl, combine shrimp, lime juice, garlic powder, salt, and pepper. Let it marinate for 5-10 minutes.
- Set up three shallow bowls: one with flour, one with beaten eggs, and one mixed with panko and shredded coconut.
- Dredge each shrimp in flour, shaking off excess. Dip into the beaten eggs, allowing excess to drip off. Coat with the panko-coconut mixture. Press gently to adhere.
- In frying pan, heat vegetable oil over medium heat until it reaches 350°F (180°C).
- Fry shrimp in batches, avoiding overcrowding, until golden brown (about 2-3 minutes per side). Use a slotted spoon to transfer to a paper towel-lined plate.
- Serve warm with your favorite dipping sauce.
