Ingredients:

  • 1 pound large shrimp, peeled and deveined (450 g)
  • 1 tablespoon lime juice (15 ml)
  • 1 teaspoon garlic powder (5 g)
  • Salt and pepper, to taste
  • ½ cup all-purpose flour (60 g)
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs (100 g)
  • ¾ cup unsweetened shredded coconut (75 g)
  • Vegetable oil, for frying (enough to fill a deep pan to about 2 inches)

Instructions:

  1. In a bowl, combine shrimp, lime juice, garlic powder, salt, and pepper. Let it marinate for 5-10 minutes.
  2. Set up three shallow bowls: one with flour, one with beaten eggs, and one mixed with panko and shredded coconut.
  3. Dredge each shrimp in flour, shaking off excess. Dip into the beaten eggs, allowing excess to drip off. Coat with the panko-coconut mixture. Press gently to adhere.
  4. In frying pan, heat vegetable oil over medium heat until it reaches 350°F (180°C).
  5. Fry shrimp in batches, avoiding overcrowding, until golden brown (about 2-3 minutes per side). Use a slotted spoon to transfer to a paper towel-lined plate.
  6. Serve warm with your favorite dipping sauce.
