Ingredients:
- 1 lb (450g) large shrimp, peeled and deveined (leave tails on, optional)
- 1 tbsp cornstarch (cornflour)
- Pinch of salt and pepper
- 1 cup (120g) all-purpose flour, plus extra for dusting
- 1/2 cup (60g) cornstarch (cornflour)
- 1 tsp baking powder
- 1 cup (240ml) ice water
- 1 large egg, lightly beaten
- 2 cups (approx. 200g) shredded cabbage (green or red, or a mix)
- 1/2 cup (approx. 50g) shredded carrots
- 1/4 cup (30g) chopped scallions (spring onions)
- 1/4 cup (60ml) rice vinegar
- 2 tbsp mayonnaise
- 1 tbsp sugar
- 1 tsp soy sauce
- 1/2 tsp sesame oil
- Pinch of salt and pepper
- 1/2 cup (120ml) mayonnaise
- 1-2 tbsp sriracha (or other chili sauce), to taste
- 1 tsp lime juice
- 4 brioche burger buns, lightly toasted
- Vegetable oil, for frying (about 4 cups / 1 liter)
Instructions:
- Prepare the Shrimp: Pat shrimp dry, toss with cornstarch, salt, and pepper. Chill while you prepare the rest.
- Make the Tempura Batter: Whisk together flour, cornstarch, and baking powder. Gently whisk in ice water and egg until just combined (a few lumps are fine). Do not overmix – that's the cardinal sin of tempura!
- Prepare the Slaw: Whisk together slaw dressing ingredients. Toss with cabbage, carrots, and scallions. Chill until ready to serve.
- Make the Spicy Mayo: Combine mayonnaise, sriracha, and lime juice. Adjust sriracha to your desired heat level.
- Heat the Oil: Heat vegetable oil in a deep fryer or pot to 350°F (175°C). Use a thermometer to ensure accuracy.
- Tempura Time! Dredge shrimp in extra flour. Dip each shrimp into the tempura batter, letting excess drip off.
- Fry the Shrimp: Carefully lower battered shrimp into the hot oil, working in batches to avoid overcrowding. Fry for 2-3 minutes per side, until golden brown and crispy.
- Drain and Rest: Remove shrimp with a slotted spoon and place on a paper towel-lined baking sheet to drain excess oil.
- Assemble the Burgers: Spread spicy mayo on both halves of each bun. Layer with slaw and top with shrimp tempura.
