Ingredients:

  • 4 (6 oz) Swai fish fillets, thawed
  • 2 tbsp Extra virgin olive oil
  • 1 tbsp Fresh lemon juice
  • 1 tsp Lemon zest
  • 2 cloves Garlic, minced fine
  • 1 tsp Smoked paprika
  • 1 tsp Dried oregano
  • 1/2 tsp Onion powder
  • 1/2 tsp Sea salt
  • 1/4 tsp Cracked black pepper
  • 2 tbsp Fresh parsley

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Use paper towels to pat each Swai fish fillet until it's completely dry.
  3. In a small bowl, whisk the olive oil, lemon juice, zest, minced garlic, paprika, oregano, onion powder, salt, and pepper.
  4. Lay the fillets on a parchment lined baking sheet. Brush the spice mixture generously over both sides of each fillet.
  5. Space the fillets out so they aren't touching. Wait until the oven is fully preheated before sliding them in.
  6. Roast for 10 to 12 minutes until the edges are slightly golden and the meat flakes easily with a fork.
  7. Use a fork to gently pull at the thickest part. It should be opaque all the way through.
  8. Remove from the oven and immediately sprinkle with the fresh parsley.
  9. Let the fish sit for 2 minutes on the pan. Serve with the extra lemon wedges on the side for squeezing.
