Ingredients:
- 4 (6 oz) Swai fish fillets, thawed
- 2 tbsp Extra virgin olive oil
- 1 tbsp Fresh lemon juice
- 1 tsp Lemon zest
- 2 cloves Garlic, minced fine
- 1 tsp Smoked paprika
- 1 tsp Dried oregano
- 1/2 tsp Onion powder
- 1/2 tsp Sea salt
- 1/4 tsp Cracked black pepper
- 2 tbsp Fresh parsley
Instructions:
- Preheat your oven to 400°F (200°C).
- Use paper towels to pat each Swai fish fillet until it's completely dry.
- In a small bowl, whisk the olive oil, lemon juice, zest, minced garlic, paprika, oregano, onion powder, salt, and pepper.
- Lay the fillets on a parchment lined baking sheet. Brush the spice mixture generously over both sides of each fillet.
- Space the fillets out so they aren't touching. Wait until the oven is fully preheated before sliding them in.
- Roast for 10 to 12 minutes until the edges are slightly golden and the meat flakes easily with a fork.
- Use a fork to gently pull at the thickest part. It should be opaque all the way through.
- Remove from the oven and immediately sprinkle with the fresh parsley.
- Let the fish sit for 2 minutes on the pan. Serve with the extra lemon wedges on the side for squeezing.
