Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp lemon juice
  • 1/2 tsp sea salt
  • 1/2 cup mayonnaise
  • 1 tbsp fresh dill, finely chopped
  • 1 clove garlic, minced
  • 1 tsp Dijon mustard
  • 1/4 tsp black pepper
  • 1/4 cup celery, finely diced
  • 2 tbsp red onion, minced
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. If using raw shrimp, bring a pot of salted water to a gentle simmer. Add the shrimp and cook for 2–3 minutes until they turn opaque and form a 'C' shape. Immediately drain them in a colander and plunge them into an ice bath. Once cold, pat them dry with paper towels.
  2. In a small bowl, whisk together the mayonnaise, lemon juice, minced garlic, Dijon mustard, and black pepper. Stir in the fresh dill until the mixture is velvety and well-combined.
  3. In a large mixing bowl, combine the chilled shrimp, diced celery, and red onion. Pour the dressing over the mixture and gently fold with a spatula until every shrimp is coated.
  4. Stir in the fresh parsley last to maintain its vibrant green color.
