Ingredients:

  • 1.5 lb raw shrimp (Peeled and Deveined, large or jumbo)
  • 2 Tbsp olive oil
  • 1 tsp kosher salt
  • 1 Tbsp paprika
  • 1 tsp packed light brown sugar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper or chipotle powder

Instructions:

  1. Prep the Shrimp: Pat the shrimp dry thoroughly. In a large bowl, toss the shrimp with the olive oil until lightly coated.
  2. Make the Bold Rub: In a small separate bowl, combine the salt, paprika, brown sugar, garlic powder, onion powder, and cayenne/chipotle powder.
  3. Season: Sprinkle the prepared rub evenly over the oiled shrimp and toss thoroughly until every piece is well coated with the spice mixture. Allow to rest while the smoker preheats.
  4. Preheat Smoker: Preheat your smoker (pellet or charcoal) to a temperature between 225°F and 250°F, using hickory or oak wood for the required bold smoke flavor.
  5. Smoke: Arrange the seasoned shrimp in a single layer on a wire rack or smoker basket to ensure maximum smoke penetration. Smoke for 25 to 30 minutes, or until the internal temperature reaches 145°F and the rub has formed a slight bark. Avoid overcooking to prevent rubbery texture.
  6. Serve immediately while hot, ideal as a quick main course or appetizer.
