Ingredients:
- 3 (6 oz) tilapia fillets
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1 tbsp olive oil
- 1 tbsp unsalted butter
- 1 tbsp fresh lemon juice
Instructions:
- Lay the tilapia fillets on a plate and press firmly with paper towels on both sides to remove surface moisture.
- Combine salt, pepper, garlic powder, and paprika in a bowl. Sprinkle the mixture over both sides of the fillets, pressing the spices into the flesh.
- Place a skillet over medium-high heat and add olive oil. Heat until the oil shimmers and begins to wispy-smoke.
- Carefully place the fillets in the pan. Press down lightly with a spatula for 5 seconds to ensure full contact.
- Cook undisturbed for 3–4 minutes. Do not move the fish until it releases naturally from the pan.
- Carefully flip the fillets and immediately add the butter to the pan.
- As the butter melts and foams, tilt the pan slightly and spoon the bubbling butter over the fillets for the remaining 3 minutes of cooking.
- Just before removing from heat, squeeze fresh lemon juice directly into the pan juices and swirl for 30 seconds.
