Ingredients:

  • 3 (6 oz) tilapia fillets
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 tbsp fresh lemon juice

Instructions:

  1. Lay the tilapia fillets on a plate and press firmly with paper towels on both sides to remove surface moisture.
  2. Combine salt, pepper, garlic powder, and paprika in a bowl. Sprinkle the mixture over both sides of the fillets, pressing the spices into the flesh.
  3. Place a skillet over medium-high heat and add olive oil. Heat until the oil shimmers and begins to wispy-smoke.
  4. Carefully place the fillets in the pan. Press down lightly with a spatula for 5 seconds to ensure full contact.
  5. Cook undisturbed for 3–4 minutes. Do not move the fish until it releases naturally from the pan.
  6. Carefully flip the fillets and immediately add the butter to the pan.
  7. As the butter melts and foams, tilt the pan slightly and spoon the bubbling butter over the fillets for the remaining 3 minutes of cooking.
  8. Just before removing from heat, squeeze fresh lemon juice directly into the pan juices and swirl for 30 seconds.
