Ingredients:

  • 1 lb (450g) pre-cooked shrimp, thawed and peeled
  • 1/2 cup (50g) celery, finely diced
  • 1/4 cup (40g) red onion, minced
  • 2 tbsp (8g) fresh dill, chopped
  • 1 tbsp (15g) fresh parsley, chopped
  • 1/2 cup (120g) mayonnaise
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tsp (2g) lemon zest
  • 1 tsp (5ml) Dijon mustard
  • 1/2 tsp (3g) Old Bay seasoning
  • 1/4 tsp (1.5g) salt
  • 1/4 tsp (1g) black pepper

Instructions:

  1. Rinse the thawed pre-cooked shrimp under cold water using a colander. Lay them on a bed of paper towels and press firmly to remove all surface moisture. If the shrimp are jumbo, chop them into bite-sized pieces.
  2. In a small bowl, whisk together the mayonnaise, lemon juice, lemon zest, Dijon mustard, Old Bay seasoning, salt, and pepper until the mixture is smooth.
  3. Combine the dried shrimp, diced celery, and minced onion in a large mixing bowl. Pour the dressing over the mixture and gently fold the ingredients together using a rubber spatula.
  4. Stir in the fresh dill and parsley last to maintain herb vibrancy.
