Ingredients:
- 1 lb (450g) pre-cooked shrimp, thawed and peeled
- 1/2 cup (50g) celery, finely diced
- 1/4 cup (40g) red onion, minced
- 2 tbsp (8g) fresh dill, chopped
- 1 tbsp (15g) fresh parsley, chopped
- 1/2 cup (120g) mayonnaise
- 1 tbsp (15ml) fresh lemon juice
- 1 tsp (2g) lemon zest
- 1 tsp (5ml) Dijon mustard
- 1/2 tsp (3g) Old Bay seasoning
- 1/4 tsp (1.5g) salt
- 1/4 tsp (1g) black pepper
Instructions:
- Rinse the thawed pre-cooked shrimp under cold water using a colander. Lay them on a bed of paper towels and press firmly to remove all surface moisture. If the shrimp are jumbo, chop them into bite-sized pieces.
- In a small bowl, whisk together the mayonnaise, lemon juice, lemon zest, Dijon mustard, Old Bay seasoning, salt, and pepper until the mixture is smooth.
- Combine the dried shrimp, diced celery, and minced onion in a large mixing bowl. Pour the dressing over the mixture and gently fold the ingredients together using a rubber spatula.
- Stir in the fresh dill and parsley last to maintain herb vibrancy.
