Ingredients:
- 2 cups (250g) all-purpose flour, plus more for dusting
- 1 teaspoon (5g) baking powder
- 1/2 teaspoon (2.5g) salt
- 1/4 cup (50g) granulated sugar
- 1 large egg
- 1/2 cup (120ml) milk, whole or 2%
- 2 tablespoons (30g) unsalted butter, melted
- 1 teaspoon (5ml) vanilla extract
- Zest of 1 lemon
- 4 cups (950ml) vegetable oil, for frying
- Powdered sugar, for dusting
Instructions:
- In a large bowl, whisk together flour, baking powder, salt, and sugar.
- In a separate bowl, whisk together egg, milk, melted butter, vanilla extract, and lemon zest.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
- On a lightly floured surface, roll out the dough to about 1/2 inch (1cm) thickness. Cut into desired shapes.
- Carefully drop the dough pieces into the hot oil, a few at a time. Fry for 2-3 minutes per side, or until golden brown and puffed up.
- Remove the fried dough from the oil with a slotted spoon or spider and place on paper towels to drain.
