Ingredients:

  • 1 tablespoon olive oil
  • 1 pound large shrimp, peeled and deveined
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, oil-packed, drained and roughly chopped
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh basil
  • Juice of 1/2 lemon

Instructions:

  1. Pat the shrimp dry with paper towels. Season with salt and pepper.
  2. Heat the olive oil in a large skillet over medium heat. Add the garlic and sun-dried tomatoes and sauté until fragrant, about 1 minute. Add red pepper flakes, if using.
  3. Add the shrimp to the skillet and cook until pink and opaque, about 2-3 minutes per side.
  4. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese and lemon juice until the cheese is melted and the sauce has thickened slightly, about 2-3 minutes.
