Ingredients:
- 1 tablespoon olive oil
- 1 pound large shrimp, peeled and deveined
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, oil-packed, drained and roughly chopped
- 1/4 teaspoon red pepper flakes (optional)
- 1 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh basil
- Juice of 1/2 lemon
Instructions:
- Pat the shrimp dry with paper towels. Season with salt and pepper.
- Heat the olive oil in a large skillet over medium heat. Add the garlic and sun-dried tomatoes and sauté until fragrant, about 1 minute. Add red pepper flakes, if using.
- Add the shrimp to the skillet and cook until pink and opaque, about 2-3 minutes per side.
- Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese and lemon juice until the cheese is melted and the sauce has thickened slightly, about 2-3 minutes.
