Ingredients:
- 4 Tilapia Fillets (approx. 4 oz / 115g each), thawed if frozen
- ½ teaspoon Sea Salt
- ¼ teaspoon Freshly Ground Black Pepper
- 3 tablespoons Extra Virgin Olive Oil
- 2 tablespoons Fresh Lemon Juice
- 1 tablespoon Lemon Zest
- 2 cloves Garlic, minced finely
- 2 tablespoons Fresh Parsley, finely chopped
- 1 tablespoon Fresh Thyme Leaves
- ½ teaspoon Dried Paprika
Instructions:
- Preheat the oven to 400°F (200°C / Gas Mark 6). Line a half-sheet baking tray with parchment paper. This prevents sticking and makes clean-up simple.
- Pat the tilapia fillets thoroughly dry using paper towels. Arrange the dried fillets on the prepared baking tray. Season lightly with salt and pepper.
- In a small mixing bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, parsley, thyme, and paprika until well combined to form the marinade.
- Evenly spoon the herb marinade over the top of each tilapia fillet, ensuring the herbs and zest are distributed across the surface.
- Bake for 12 to 15 minutes. The fish is done when it flakes easily with a fork and the internal temperature registers 145°F (63°C).
- Remove from the oven immediately. Garnish the fillets with an extra squeeze of fresh lemon juice and a sprinkle of fresh parsley before serving straight from the tray.
