Ingredients:

  • 4 Tilapia Fillets (approx. 4 oz / 115g each), thawed if frozen
  • ½ teaspoon Sea Salt
  • ¼ teaspoon Freshly Ground Black Pepper
  • 3 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Fresh Lemon Juice
  • 1 tablespoon Lemon Zest
  • 2 cloves Garlic, minced finely
  • 2 tablespoons Fresh Parsley, finely chopped
  • 1 tablespoon Fresh Thyme Leaves
  • ½ teaspoon Dried Paprika

Instructions:

  1. Preheat the oven to 400°F (200°C / Gas Mark 6). Line a half-sheet baking tray with parchment paper. This prevents sticking and makes clean-up simple.
  2. Pat the tilapia fillets thoroughly dry using paper towels. Arrange the dried fillets on the prepared baking tray. Season lightly with salt and pepper.
  3. In a small mixing bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, parsley, thyme, and paprika until well combined to form the marinade.
  4. Evenly spoon the herb marinade over the top of each tilapia fillet, ensuring the herbs and zest are distributed across the surface.
  5. Bake for 12 to 15 minutes. The fish is done when it flakes easily with a fork and the internal temperature registers 145°F (63°C).
  6. Remove from the oven immediately. Garnish the fillets with an extra squeeze of fresh lemon juice and a sprinkle of fresh parsley before serving straight from the tray.
