Ingredients:

  • 4 (6-oz / 170g) salmon fillets, center-cut, skin-on
  • 1 tsp (6g) sea salt
  • 1/2 tsp (3g) cracked black pepper
  • 3 tbsp (45ml) extra virgin olive oil
  • 1 tbsp (14g) grass-fed butter, melted
  • 4 cloves garlic, finely minced
  • 1 large lemon, zested and juiced (approx. 2 tbsp juice)
  • 1 tsp (2g) dried oregano

Instructions:

  1. Preheat. Set your oven to 400°F (200°C). Note: A fully preheated oven is crucial for that immediate heat blast.
  2. Dry the fish. Use paper towels to pat the 4 salmon fillets completely dry on all sides. Until the paper towel comes away clean and dry.
  3. Prep the tray. Line your baking sheet with parchment paper and lay the fillets down with at least two inches of space between them.
  4. Whisk the infusion. In a small bowl, combine 3 tbsp olive oil, 1 tbsp melted butter, 4 minced garlic cloves, lemon zest, 2 tbsp lemon juice, and 1 tsp dried oregano.
  5. Season simply. Sprinkle 1 tsp sea salt and 1/2 tsp black pepper evenly over the fillets. Note: Doing this before the oil helps the salt dissolve into the fish.
  6. Apply the glaze. Brush the lemon garlic mixture generously over each fillet. Until the garlic bits are evenly distributed across the top.
  7. Bake. Slide the tray into the center rack and bake for 12 minutes.
  8. Check doneness. The salmon should be opaque and should flake easily when pressed with a fork.
  9. Garnish. Sprinkle with 2 tbsp chopped fresh parsley immediately. Until the aroma of the fresh herbs fills the air.
  10. Rest. Let the fish sit on the tray for 2 minutes before serving to allow the juices to redistribute.
