Ingredients:
- 1.5 lbs grouper fillets (approx. 4 fillets, 1-inch thick)
- 1 tsp Kosher salt
- 1/2 tsp freshly cracked black pepper
- 3 tbsp extra virgin olive oil
- 2 cloves garlic, microplaned
- 1 tbsp fresh parsley, finely chopped
- 1 tsp fresh thyme leaves
- Zest of 1 large lemon
- 1/2 tsp smoked paprika
- 2 tbsp unsalted butter, melted
- 1 tbsp fresh lemon juice
- Lemon wedges for garnish
Instructions:
- Pat the grouper fillets with paper towels until completely dry. In a small bowl, whisk together the olive oil, garlic, parsley, thyme, lemon zest, and smoked paprika.
- Brush both sides of the fish fillets generously with the herb mixture. Let the fish marinate at room temperature for 10 minutes.
- Preheat the grill to medium-high heat (400°F/200°C) and thoroughly clean and oil the grates.
- Place the fillets on the grill at a 45-degree angle. Close the lid and sear for 4 to 5 minutes without moving the fish until they release easily from the grates.
- Flip the fillets carefully using a fish spatula. Brush the seared tops with a mixture of melted butter and lemon juice.
- Grill for another 3 to 4 minutes until the internal temperature reaches 145°F (63°C) and the fish flakes easily with a fork.
