Ingredients:
- 4 (6 oz / 170g) Cod fillets
- 2 tbsp (30ml) Olive oil
- 1 tsp (5g) Garlic powder
- 1 tsp (5g) Paprika
- 1/2 tsp (3g) Salt
- 1/2 tsp (3g) Black pepper
- 3 tbsp (42g) Unsalted butter, melted
- 1 tbsp (15ml) Fresh lemon juice
- 1 tsp (2g) Lemon zest
- 1 tbsp (3g) Fresh parsley, chopped
Instructions:
- Pat the cod fillets bone-dry with paper towels. In a small bowl, whisk together the olive oil, garlic powder, paprika, salt, and pepper. Brush this marinade generously over both sides of each fillet.
- Preheat your grill to medium-high heat and lightly oil the grates using a paper towel dipped in oil.
- Place the fillets carefully on the grill. Close the lid and sear for 4–5 minutes without moving them. Flip carefully and grill for another 3–4 minutes.
- Allow the fish to rest for 2 minutes. While resting, whisk together the melted butter, lemon juice, zest, and parsley.
- Drizzle the lemon butter sauce over the fillets immediately before serving.
