Ingredients:

  • 4 (6 oz / 170g) Cod fillets
  • 2 tbsp (30ml) Olive oil
  • 1 tsp (5g) Garlic powder
  • 1 tsp (5g) Paprika
  • 1/2 tsp (3g) Salt
  • 1/2 tsp (3g) Black pepper
  • 3 tbsp (42g) Unsalted butter, melted
  • 1 tbsp (15ml) Fresh lemon juice
  • 1 tsp (2g) Lemon zest
  • 1 tbsp (3g) Fresh parsley, chopped

Instructions:

  1. Pat the cod fillets bone-dry with paper towels. In a small bowl, whisk together the olive oil, garlic powder, paprika, salt, and pepper. Brush this marinade generously over both sides of each fillet.
  2. Preheat your grill to medium-high heat and lightly oil the grates using a paper towel dipped in oil.
  3. Place the fillets carefully on the grill. Close the lid and sear for 4–5 minutes without moving them. Flip carefully and grill for another 3–4 minutes.
  4. Allow the fish to rest for 2 minutes. While resting, whisk together the melted butter, lemon juice, zest, and parsley.
  5. Drizzle the lemon butter sauce over the fillets immediately before serving.
