Ingredients:
- skinless cod fillets (about 6 oz each)
- tablespoons unsalted butter
- cloves fresh garlic, finely minced
- tablespoons fresh parsley, finely chopped
- tablespoons fresh lemon juice
- teaspoon lemon zest
- /2 teaspoon dried oregano (optional)
- Kosher salt, to taste
- Freshly ground black pepper, to taste
Instructions:
- Preheat the oven to 400°F (200°C). Lightly grease a 9x13 inch oven-safe baking dish or line a baking sheet with parchment paper.
- Melt the butter. In a small bowl, whisk the melted butter with the minced garlic, lemon zest, oregano (if using), salt, and pepper.
- Pat the cod fillets completely dry using paper towels. Place them into the prepared baking dish without overcrowding.
- Spoon the garlic butter mixture evenly over the top of each cod fillet, ensuring the garlic is distributed nicely.
- Place the dish in the preheated oven and bake for 12–15 minutes, or until the fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
- Remove from the oven. Drizzle generously with the fresh lemon juice and garnish with the fresh parsley before serving immediately.
