Ingredients:

  • skinless cod fillets (about 6 oz each)
  • tablespoons unsalted butter
  • cloves fresh garlic, finely minced
  • tablespoons fresh parsley, finely chopped
  • tablespoons fresh lemon juice
  • teaspoon lemon zest
  • /2 teaspoon dried oregano (optional)
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Instructions:

  1. Preheat the oven to 400°F (200°C). Lightly grease a 9x13 inch oven-safe baking dish or line a baking sheet with parchment paper.
  2. Melt the butter. In a small bowl, whisk the melted butter with the minced garlic, lemon zest, oregano (if using), salt, and pepper.
  3. Pat the cod fillets completely dry using paper towels. Place them into the prepared baking dish without overcrowding.
  4. Spoon the garlic butter mixture evenly over the top of each cod fillet, ensuring the garlic is distributed nicely.
  5. Place the dish in the preheated oven and bake for 12–15 minutes, or until the fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  6. Remove from the oven. Drizzle generously with the fresh lemon juice and garnish with the fresh parsley before serving immediately.
