Ingredients:
- 4 Cod Fillets (approx. 6 oz/each), thick-cut
- 1 tsp Kosher Salt
- ½ tsp Black Pepper
- ¼ cup Extra Virgin Olive Oil (EVOO)
- 2 Tbsp Fresh Lemon Juice
- Zest of 1 medium lemon
- 4 cloves Fresh Garlic, finely minced
- 1 tsp Dried Oregano
- ½ tsp Dried Thyme
- 2 Tbsp Fresh Flat-Leaf Parsley, rough chopped
- 8 thin Lemon Slices
Instructions:
- Preheat Oven: Set the oven temperature to 400°F (200°C). Line a sheet pan with parchment paper or foil for easy cleanup.
- Pat the Fish Dry: Gently blot the cod fillets with kitchen roll. Season both sides of the fillets generously with salt and pepper.
- Prepare the Dressing: In a small mixing bowl, combine the olive oil, fresh lemon juice, lemon zest, minced garlic, dried oregano, and dried thyme. Whisk briefly to emulsify slightly.
- Dress the Fish: Place the seasoned cod fillets onto the prepared sheet pan. Brush half of the lemon-garlic dressing evenly over the tops and sides of the fillets.
- Add Lemon Slices: Place two thin slices of fresh lemon over the top of each fillet.
- Bake: Place the sheet pan into the preheated oven. Bake for 12 to 15 minutes, or until the fish is opaque throughout and the internal temperature registers 145°F (63°C).
- Rest and Baste: Carefully remove the sheet pan from the oven. Drizzle the remaining lemon-garlic dressing over the hot fish immediately. Allow the fish to rest on the pan for 2–3 minutes.
- Garnish and Serve: Transfer the fillets to serving plates using a spatula. Discard the baked lemon slices. Sprinkle generously with fresh chopped parsley before serving.
