Ingredients:

  • 4 portions (approx. 6 oz each) thick-cut Cod Fillets, skin off
  • 6 Tbsp Unsalted Butter (melted)
  • 5 large cloves Fresh Garlic, finely minced
  • Zest of 1/2 medium lemon
  • 2 Tbsp Fresh Parsley (flat-leaf), finely chopped
  • 1/2 tsp Dried Oregano
  • 1/2 tsp Kosher Salt (for butter mixture)
  • 1/4 tsp Freshly Ground Black Pepper
  • Kosher Salt (to taste, for fish)
  • 1 tsp Fresh Lemon Juice (for finish)

Instructions:

  1. Preheat the Oven: Preheat oven to 400°F (200°C). Lightly grease your baking dish or line a sheet pan with parchment paper.
  2. Make the Garlic Butter: In a small bowl, melt the unsalted butter.
  3. Infuse the Butter: Stir the minced garlic, lemon zest, chopped parsley, dried oregano, ½ tsp Kosher salt, and black pepper into the melted butter. Mix well until combined.
  4. Prepare and Season the Cod: Remove the cod fillets from the packaging and pat them very dry with kitchen paper. Place the fillets in the prepared baking dish. Sprinkle the fish lightly with an extra pinch of Kosher salt and pepper.
  5. Coat the Fish: Spoon the prepared garlic butter mixture evenly over the top of the cod fillets, ensuring every piece is well-coated.
  6. Roast: Transfer the dish to the preheated oven. Bake for 10 to 12 minutes.
  7. Check for Doneness: The fish is done when it flakes easily with a fork and the internal temperature reaches 145°F (63°C) at the thickest part.
  8. Rest and Finish: Carefully remove the baking dish from the oven. Drizzle the fillets with the 1 tsp of fresh lemon juice.
  9. Serve: Spoon the remaining buttery pan juices over the fish before serving immediately.
