  • ½ cup (113g) Japanese Mayonnaise (Kewpie brand preferred)
  • 2 tablespoons (30ml) Sriracha Sauce
  • 1 teaspoon (5ml) Rice Vinegar
  • ½ teaspoon (2.5ml) Sesame Oil
  • ½ teaspoon (2.5g) Sugar (optional)

Instructions:

  1. In the mixing bowl, combine the Japanese mayonnaise, Sriracha sauce, rice vinegar, sesame oil, and sugar (if using).
  2. Whisk vigorously until all ingredients are thoroughly combined and the mixture is smooth and creamy.
  3. Taste the spicy mayo and adjust the level of Sriracha for desired spiciness. Add a pinch more sugar if it needs more balancing.
  4. For best flavor, cover the bowl and chill in the refrigerator for at least 30 minutes to allow the flavors to meld (optional).
  5. Drizzle over sushi rolls, tempura, or other Asian-inspired dishes.
