Ingredients:

  • 4 (6 oz or 170 g) salmon fillets
  • 4 cloves garlic, minced
  • ¼ cup (60 ml) olive oil
  • 2 tablespoons (30 ml) lemon juice
  • 1 teaspoon (5 g) dried oregano
  • 1 teaspoon (5 g) salt
  • ½ teaspoon (2 g) black pepper
  • 1 cup (200 g) quinoa, rinsed
  • 2 cups (480 ml) vegetable broth or water
  • 1 tablespoon (15 ml) olive oil
  • 1 clove garlic, minced
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions:

  1. In a mixing bowl, combine minced garlic, olive oil, lemon juice, oregano, salt, and pepper. Add salmon fillets, ensuring they are well-coated. Marinate for at least 30 minutes.
  2. Rinse quinoa under cold water. In a pot, combine quinoa and vegetable broth. Bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until all liquid is absorbed. Remove from heat and let sit for 5 minutes, then fluff with a fork.
  3. Preheat the grill to medium-high heat. Oil the grill grates to prevent sticking. Place salmon fillets on the grill, skin-side down. Cook for 4-5 minutes, then carefully flip and grill for another 3-4 minutes until salmon is opaque and flakes easily.
  4. In a skillet, heat olive oil and sauté minced garlic until fragrant. Add cooked quinoa and chopped green onions. Season with salt and pepper. Serve grilled salmon on a bed of garlic-flavored quinoa.
