Ingredients:

  • 8 oz spaghetti
  • 1 cup sea urchin roe (uni)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • Salt, to taste
  • Freshly cracked black pepper, to taste
  • Zest of 1 lemon
  • Juice of half a lemon
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Reserve about 1 cup of pasta water and drain the rest.
  2. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant but not browned. Add red pepper flakes and cook for an additional minute.
  3. Lower the heat and add in the sea urcin roe to the skillet. Stir gently to combine with garlic and oil. Slowly mix in reserved pasta water until you reach your desired sauce consistency.
  4. Toss cooked spaghetti into the sauce, ensuring it is well-coated. Season with salt, freshly cracked black pepper, lemon zest, and lemon juice.
  5. Plate immediately and garnish with fresh parsley before serving.
