Ingredients:
- 1 cup (120g) all-purpose flour
- 1/2 cup (120ml) water (cold)
- 1 large egg
- 1/4 teaspoon salt
- 1/2 lb (225g) fresh prawns, peeled and deveined
- 1 cup (150g) finely chopped broccoli
- 2 tablespoons (30ml) soy sauce
- 1 teaspoon (5g) minced garlic
- 1 teaspoon (5g) minced ginger
- 2 green onions, finely sliced
- Salt and pepper to taste
- Vegetable oil (for deep frying)
Instructions:
- In a bowl, whisk together flour, salt, egg, and gradually add cold water until smooth. Let the batter rest in the refrigerator for 30 minutes.
- In a separate bowl, combine prawns, chopped broccoli, soy sauce, garlic, ginger, green onions, and season with salt and pepper. Mix well and set aside.
- Heat a non-stick frying pan over medium heat and add a splash of oil. Pour a ladleful of batter to form each pancake, spreading it out gently.
- Spoon the filling onto one half of the pancake and fold the other half over to cover.
- Cook for 3-4 minutes on each side until golden brown and crispy. Remove and drain on paper towels.
- Serve hot with a dipping sauce of your choice (soy sauce or sweet chili sauce).
