Ingredients:

  • 1 cup (120g) all-purpose flour
  • 1/2 cup (120ml) water (cold)
  • 1 large egg
  • 1/4 teaspoon salt
  • 1/2 lb (225g) fresh prawns, peeled and deveined
  • 1 cup (150g) finely chopped broccoli
  • 2 tablespoons (30ml) soy sauce
  • 1 teaspoon (5g) minced garlic
  • 1 teaspoon (5g) minced ginger
  • 2 green onions, finely sliced
  • Salt and pepper to taste
  • Vegetable oil (for deep frying)

Instructions:

  1. In a bowl, whisk together flour, salt, egg, and gradually add cold water until smooth. Let the batter rest in the refrigerator for 30 minutes.
  2. In a separate bowl, combine prawns, chopped broccoli, soy sauce, garlic, ginger, green onions, and season with salt and pepper. Mix well and set aside.
  3. Heat a non-stick frying pan over medium heat and add a splash of oil. Pour a ladleful of batter to form each pancake, spreading it out gently.
  4. Spoon the filling onto one half of the pancake and fold the other half over to cover.
  5. Cook for 3-4 minutes on each side until golden brown and crispy. Remove and drain on paper towels.
  6. Serve hot with a dipping sauce of your choice (soy sauce or sweet chili sauce).
