Ingredients:
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon lemon juice
- 2 tablespoons fresh parsley, chopped
- 4 large eggs
- 1/2 cup heavy cream
- 1 cup shredded cheese (cheddar, mozzarella, or a blend)
- 1/4 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
Instructions:
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant (about 1 minute).
- Add shrimp, paprika, salt, pepper, and lemon juice. Cook until shrimp are pink (about 3-4 minutes). Stir in chopped parsley. Remove from heat.
- In a mixing bowl, whisk together eggs, heavy cream, cheese, cayenne pepper, salt, and pepper until well combined.
- Spread cooked shrimp mixture evenly in the bottom of the baking dish.
- Pour the cheesy egg mixture over the top.
- Bake in preheated oven for 20-25 minutes or until the egg is set and lightly golden.
- Let cool for a few minutes before slicing into squares. Garnish with additional parsley if desired.
