Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 4 large eggs
  • 1/2 cup heavy cream
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant (about 1 minute).
  3. Add shrimp, paprika, salt, pepper, and lemon juice. Cook until shrimp are pink (about 3-4 minutes). Stir in chopped parsley. Remove from heat.
  4. In a mixing bowl, whisk together eggs, heavy cream, cheese, cayenne pepper, salt, and pepper until well combined.
  5. Spread cooked shrimp mixture evenly in the bottom of the baking dish.
  6. Pour the cheesy egg mixture over the top.
  7. Bake in preheated oven for 20-25 minutes or until the egg is set and lightly golden.
  8. Let cool for a few minutes before slicing into squares. Garnish with additional parsley if desired.
