Ingredients:

  • 1 pound fresh cheese curds (preferably white cheddar)
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1 cup breadcrumbs (preferably seasoned)
  • Oil for frying (canola or vegetable oil)

Instructions:

  1. Place cheese curds on a paper towel-lined plate to absorb moisture, allowing them to dry for 15 minutes.
  2. In one bowl, whisk together flour, garlic powder, paprika, salt, and pepper. In a second bowl, beat eggs. In a third bowl, place breadcrumbs.
  3. Dredge each cheese curd in the flour mixture, shaking off excess. Dip into beaten eggs, coating evenly. Roll in breadcrumbs until well coated.
  4. Place breaded curds on a baking sheet and freeze for 30 minutes to help the coating adhere.
  5. In a deep fryer or pot, heat oil to 350°F (175°C).
  6. Carefully add cheese curds in batches to avoid overcrowding. Fry until golden brown, about 2-3 minutes per batch. Remove with a slotted spoon and drain on paper towels.
  7. Enjoy warm, paired with your favorite dipping sauce.
