Ingredients:
- 1 pound fresh cheese curds (preferably white cheddar)
- 1 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs
- 1 cup breadcrumbs (preferably seasoned)
- Oil for frying (canola or vegetable oil)
Instructions:
- Place cheese curds on a paper towel-lined plate to absorb moisture, allowing them to dry for 15 minutes.
- In one bowl, whisk together flour, garlic powder, paprika, salt, and pepper. In a second bowl, beat eggs. In a third bowl, place breadcrumbs.
- Dredge each cheese curd in the flour mixture, shaking off excess. Dip into beaten eggs, coating evenly. Roll in breadcrumbs until well coated.
- Place breaded curds on a baking sheet and freeze for 30 minutes to help the coating adhere.
- In a deep fryer or pot, heat oil to 350°F (175°C).
- Carefully add cheese curds in batches to avoid overcrowding. Fry until golden brown, about 2-3 minutes per batch. Remove with a slotted spoon and drain on paper towels.
- Enjoy warm, paired with your favorite dipping sauce.
