Ingredients:

  • 4 (6 oz / 170g) Tilapia fillets
  • 1/2 cup (65g) All-purpose flour
  • 2 large eggs, beaten
  • 1 cup (100g) Panko breadcrumbs
  • 1/2 cup (50g) Grated Parmesan cheese
  • 1 tsp (6g) Garlic powder
  • 1 tsp (6g) Paprika
  • 1/2 tsp (3g) Salt
  • 1/4 tsp (1.5g) Black pepper
  • 3 tbsp (42g) Neutral oil

Instructions:

  1. Use paper towels to press firmly on both sides of each tilapia fillet to remove all surface water.
  2. Mix garlic powder, paprika, salt, and pepper into the flour bowl. Toss the fillets in the seasoned flour, shaking off any excess.
  3. Dip the floured fish into the beaten eggs, ensuring every inch is coated but not dripping.
  4. Press the fillets firmly into the mixture of Panko and Parmesan using your palms to lock the crumbs in place.
  5. Add neutral oil to a skillet over medium-high heat until it shimmers.
  6. Place fillets in the pan and sear for 3–4 minutes without moving them until the bottom is mahogany-colored.
  7. Flip carefully with a spatula and cook for another 3 minutes until the second side is golden and the fish flakes easily.
