Ingredients:

  • 1 pound (450g) fresh chicken livers, cleaned and trimmed
  • 1 cup (120g) all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon cayenne pepper
  • Salt and pepper to taste
  • Vegetable oil for frying (about 4 cups or 1L)

Instructions:

  1. Clean and trim chicken livers, removing any connective tissue. Pat dry with paper towels and place in a bowl.
  2. In a separate bowl, combine the flour, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper. Mix well until evenly combined.
  3. Dredge each liver in the seasoned flour, ensuring it is fully coated. Shake off excess flour and lay livers on a plate. Chill for 30 minutes.
  4. In a large frying pan or deep fryer, heat vegetable oil to 350°F (175°C).
  5. Working in batches, carefully add livers to hot oil, being cautious to avoid overcrowding. Fry for about 3-4 minutes per side or until golden brown and cooked through.
  6. Use a slotted spoon to remove livers from oil. Place on paper towels or a wire rack to drain excess oil. Serve hot with your favorite dipping sauce.
