Ingredients:
- 2 lb (900 g) walleye, bass, or perch fillets
- 1 cup (100 g) seasoned bread crumbs
- 1 tbsp (15 ml) vegetable oil
- 1 1/2 cups (360 ml) salsa
- 2 cups (200 g) shredded mozzarella cheese
Instructions:
- Pat the fish fillets dry with a paper towel.
- Place the seasoned bread crumbs in a shallow dish. Dredge each fillet in the bread crumbs, pressing gently to adhere.
- In a large skillet, heat the vegetable oil over medium-high heat.
- Carefully add the coated fillets to the skillet. Brown on both sides until golden and crispy, approximately 2-3 minutes per side.
- Remove the fillets from the skillet and transfer them to a greased 13 x 9 x 2 inch baking dish.
- Pour the salsa over the fillets. Sprinkle the shredded mozzarella cheese evenly on top.
- Place the dish in a preheated oven at 400°F (200°C), and bake uncovered for 7-10 minutes, or until the fish flakes easily with a fork and the cheese is melted and bubbly.
