Ingredients:

  • 4 tilapia fillets (about 6 ounces each)
  • 1 cup breadcrumbs (plain or Panko)
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • ¼ cup olive oil
  • Juice of 1 lemon (about 2 tablespoons)
  • 2 tablespoons fresh parsley, chopped
  • 1 clove garlic, minced
  • Zest of 1 lemon

Instructions:

  1. Prepare the Breading Station: Set up three shallow bowls: one with flour, another with beaten eggs, and a third with breadcrumbs, garlic powder, thyme, oregano, salt, and pepper mixed together.
  2. Coat the Fish: Season tilapia fillets with salt and pepper. Dredge each fillet first in the flour, then dip into the eggs, and finally coat with the breadcrumb mixture, pressing gently to adhere.
  3. Heat the Pan: In a large frying pan, heat olive oil over medium-high heat until shimmering.
  4. Cook the Fish: Fry the breaded tilapia fillets in batches for about 3-4 minutes on each side until golden brown and cooked through (internal temperature should reach 145°F/63°C).
  5. Prepare the Lemon Herb Sauce: Whisk together olive oil, lemon juice, parsley, minced garlic, and lemon zest in a small bowl.
  6. Serve: Plate the crispy tilapia and drizzle with lemon herb sauce before serving.
