Ingredients:
- 4 tilapia fillets (about 6 ounces each)
- 1 cup breadcrumbs (plain or Panko)
- ½ cup all-purpose flour
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- ¼ cup olive oil
- Juice of 1 lemon (about 2 tablespoons)
- 2 tablespoons fresh parsley, chopped
- 1 clove garlic, minced
- Zest of 1 lemon
Instructions:
- Prepare the Breading Station: Set up three shallow bowls: one with flour, another with beaten eggs, and a third with breadcrumbs, garlic powder, thyme, oregano, salt, and pepper mixed together.
- Coat the Fish: Season tilapia fillets with salt and pepper. Dredge each fillet first in the flour, then dip into the eggs, and finally coat with the breadcrumb mixture, pressing gently to adhere.
- Heat the Pan: In a large frying pan, heat olive oil over medium-high heat until shimmering.
- Cook the Fish: Fry the breaded tilapia fillets in batches for about 3-4 minutes on each side until golden brown and cooked through (internal temperature should reach 145°F/63°C).
- Prepare the Lemon Herb Sauce: Whisk together olive oil, lemon juice, parsley, minced garlic, and lemon zest in a small bowl.
- Serve: Plate the crispy tilapia and drizzle with lemon herb sauce before serving.
