Ingredients:
- 2 cans (10 oz / 283g) canned tuna in water, drained thoroughly
- 1 large (50g) egg, lightly beaten
- 2 tbsp (30g) mayonnaise
- 1 tbsp (15g) Dijon mustard
- 1/4 cup (15g) fresh parsley, finely chopped
- 2 cloves (6g) garlic, minced
- 1 tsp (2g) dried Italian seasoning
- 1/2 tsp (3g) salt
- 1/4 tsp (1g) black pepper
- 1 tbsp (15ml) lemon juice
- 1/2 cup (60g) Panko breadcrumbs
- 2 tbsp (30ml) extra virgin olive oil
Instructions:
- In a large bowl, flake the drained tuna with a fork until no large chunks remain. Stir in the beaten egg, mayonnaise, Dijon mustard, minced garlic, lemon juice, and Italian seasonings until just combined.
- Fold in half of the breadcrumbs. Divide the mixture into 5 equal portions and shape each into a patty approximately 1 inch thick.
- Press the exterior of each patty gently into the remaining breadcrumbs to create a thin, uniform coating.
- Heat olive oil in a skillet over medium heat until shimmering. Sear the patties for 3-4 minutes per side without moving them, until a golden-brown crust forms.
