Ingredients:

  • 2 cans (10 oz / 283g) canned tuna in water, drained thoroughly
  • 1 large (50g) egg, lightly beaten
  • 2 tbsp (30g) mayonnaise
  • 1 tbsp (15g) Dijon mustard
  • 1/4 cup (15g) fresh parsley, finely chopped
  • 2 cloves (6g) garlic, minced
  • 1 tsp (2g) dried Italian seasoning
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1g) black pepper
  • 1 tbsp (15ml) lemon juice
  • 1/2 cup (60g) Panko breadcrumbs
  • 2 tbsp (30ml) extra virgin olive oil

Instructions:

  1. In a large bowl, flake the drained tuna with a fork until no large chunks remain. Stir in the beaten egg, mayonnaise, Dijon mustard, minced garlic, lemon juice, and Italian seasonings until just combined.
  2. Fold in half of the breadcrumbs. Divide the mixture into 5 equal portions and shape each into a patty approximately 1 inch thick.
  3. Press the exterior of each patty gently into the remaining breadcrumbs to create a thin, uniform coating.
  4. Heat olive oil in a skillet over medium heat until shimmering. Sear the patties for 3-4 minutes per side without moving them, until a golden-brown crust forms.
