Ingredients:

  • 1 pound (450g) large shrimp, peeled and deveined
  • 1/2 cup (60g) cornstarch
  • 1/4 cup (30g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup (120ml) cold water
  • Oil for frying (vegetable or canola)
  • 1/2 cup (120ml) mayonnaise
  • 1/4 cup (60ml) honey
  • 1 tablespoon sweetened condensed milk
  • 1/2 teaspoon lemon juice
  • 1/2 cup (60g) walnuts
  • 1/4 cup (50g) sugar
  • 1/4 cup (60ml) water

Instructions:

  1. Combine sugar and water in a saucepan; simmer until sugar dissolves. Add walnuts; cook until they are coated and caramelized, spreading them on a lined baking sheet to cool.
  2. In a mixing bowl, whisk together cornstarch, flour, baking powder, salt, and pepper. Gradually add cold water to form a batter.
  3. Heat oil in a deep frying pot to 350°F (175°C). Dip shrimp in the batter and fry in batches until golden brown, about 3-4 minutes. Remove and drain on paper towels.
  4. In a bowl, whisk together mayonnaise, honey, condensed milk, and lemon juice until smooth.
  5. Toss the fried shrimp in the sauce until well coated. Top with caramelized walnuts before serving.
