Ingredients:
- 1 pound (450g) large shrimp, peeled and deveined
- 1/2 cup (60g) cornstarch
- 1/4 cup (30g) all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup (120ml) cold water
- Oil for frying (vegetable or canola)
- 1/2 cup (120ml) mayonnaise
- 1/4 cup (60ml) honey
- 1 tablespoon sweetened condensed milk
- 1/2 teaspoon lemon juice
- 1/2 cup (60g) walnuts
- 1/4 cup (50g) sugar
- 1/4 cup (60ml) water
Instructions:
- Combine sugar and water in a saucepan; simmer until sugar dissolves. Add walnuts; cook until they are coated and caramelized, spreading them on a lined baking sheet to cool.
- In a mixing bowl, whisk together cornstarch, flour, baking powder, salt, and pepper. Gradually add cold water to form a batter.
- Heat oil in a deep frying pot to 350°F (175°C). Dip shrimp in the batter and fry in batches until golden brown, about 3-4 minutes. Remove and drain on paper towels.
- In a bowl, whisk together mayonnaise, honey, condensed milk, and lemon juice until smooth.
- Toss the fried shrimp in the sauce until well coated. Top with caramelized walnuts before serving.
