Ingredients:

  • 12 oz Grouper Fillets (two 6-ounce fillets)
  • 2 Tbsp Olive Oil Spray (or brushed oil)
  • 1 tsp Smoked Paprika
  • 1/2 tsp Garlic Powder
  • 1 tsp Kosher Salt
  • 1/2 tsp Black Pepper
  • 150 g Russet Potatoes, cubed (for implied side dish to meet carbohydrate goals)

Instructions:

  1. Preheat the air fryer to 400°F (200°C) for several minutes.
  2. Pat the grouper fillets completely dry using paper towels. This step is critical for achieving a crispy crust (Maillard Reaction).
  3. Mix the smoked paprika, garlic powder, salt, and pepper in a small bowl to create the seasoning blend.
  4. Lightly coat the grouper fillets with olive oil spray or brushed oil. Sprinkle the seasoning mix evenly over both sides, pressing lightly to adhere.
  5. Place the seasoned grouper fillets in the air fryer basket in a single layer, ensuring they do not touch. If cooking potatoes concurrently, ensure they are placed separately to allow proper air circulation.
  6. Air fry for 8 to 10 minutes total. Flip the fillets gently halfway through the cooking time (around the 4-minute mark). The fish is done when it flakes easily with a fork and the internal temperature reaches 145°F (63°C).
  7. Carefully remove the crispy grouper from the air fryer and serve immediately.
