Ingredients:
- 12 oz Grouper Fillets (two 6-ounce fillets)
- 2 Tbsp Olive Oil Spray (or brushed oil)
- 1 tsp Smoked Paprika
- 1/2 tsp Garlic Powder
- 1 tsp Kosher Salt
- 1/2 tsp Black Pepper
- 150 g Russet Potatoes, cubed (for implied side dish to meet carbohydrate goals)
Instructions:
- Preheat the air fryer to 400°F (200°C) for several minutes.
- Pat the grouper fillets completely dry using paper towels. This step is critical for achieving a crispy crust (Maillard Reaction).
- Mix the smoked paprika, garlic powder, salt, and pepper in a small bowl to create the seasoning blend.
- Lightly coat the grouper fillets with olive oil spray or brushed oil. Sprinkle the seasoning mix evenly over both sides, pressing lightly to adhere.
- Place the seasoned grouper fillets in the air fryer basket in a single layer, ensuring they do not touch. If cooking potatoes concurrently, ensure they are placed separately to allow proper air circulation.
- Air fry for 8 to 10 minutes total. Flip the fillets gently halfway through the cooking time (around the 4-minute mark). The fish is done when it flakes easily with a fork and the internal temperature reaches 145°F (63°C).
- Carefully remove the crispy grouper from the air fryer and serve immediately.
