Ingredients:
- 1 cup (125 g) all-purpose flour
- 1/2 cup (60 g) cornstarch
- 1/2 teaspoon baking powder
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup (240 ml) cold sparkling water
- 1 pound (450 g) large shrimp, peeled and deveined
- Salt and pepper to taste
- Oil for frying
Instructions:
- Rinse shrimp under cold water, pat dry, and season with salt and pepper. Set aside.
- In a mixing bowl, combine flour, cornstarch, baking powder, paprika, garlic powder, onion powder, salt, and black pepper. Whisk until well combined.
- Gradually whisk in the cold sparkling water until the batter is smooth and slightly thickened. Let it rest for 20-30 minutes.
- In a deep frying pan, pour enough oil to submerge the shrimp (about 2-3 inches). Heat the oil to 350°F (175°C).
- Dip each shrimp into the batter, ensuring it’s well-coated. Carefully place the battered shrimp into the hot oil, working in batches to avoid overcrowding.
- Fry until golden brown (approximately 3-4 minutes), flipping halfway through for even cooking. Use a slotted spoon to remove shrimp and place on paper towels to drain excess oil.
