Ingredients:

  • 2 (4-6 ounce) white fish fillets (cod, haddock, tilapia)
  • 1 tablespoon olive oil
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • Lemon wedges, for serving
  • Fresh parsley, chopped for garnish (optional)

Instructions:

  1. Pat fish fillets dry with paper towels (super important!).
  2. In a shallow dish, combine flour, salt, pepper, and garlic powder (if using). Dredge fish fillets in the flour mixture, ensuring they are evenly coated. Shake off excess flour.
  3. Heat olive oil in a large non-stick skillet over medium-high heat. The oil should shimmer.
  4. Carefully place the fish fillets in the hot skillet, leaving space between them. Cook for 4-5 minutes per side, or until the fish is golden brown and flakes easily with a fork. Visual cue: Look for a nice, even browning.
  5. Remove fish from skillet and place on a plate lined with paper towels to drain excess oil. Drizzle with a little extra olive oil, garnish with fresh parsley (if desired), and serve immediately with lemon wedges.
