Ingredients:
- 2 (4-6 ounce) white fish fillets (cod, haddock, tilapia)
- 1 tablespoon olive oil
- 2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder (optional)
- Lemon wedges, for serving
- Fresh parsley, chopped for garnish (optional)
Instructions:
- Pat fish fillets dry with paper towels (super important!).
- In a shallow dish, combine flour, salt, pepper, and garlic powder (if using). Dredge fish fillets in the flour mixture, ensuring they are evenly coated. Shake off excess flour.
- Heat olive oil in a large non-stick skillet over medium-high heat. The oil should shimmer.
- Carefully place the fish fillets in the hot skillet, leaving space between them. Cook for 4-5 minutes per side, or until the fish is golden brown and flakes easily with a fork. Visual cue: Look for a nice, even browning.
- Remove fish from skillet and place on a plate lined with paper towels to drain excess oil. Drizzle with a little extra olive oil, garnish with fresh parsley (if desired), and serve immediately with lemon wedges.
