Ingredients:
- 2 cups mashed potatoes (about 500g, prepared ahead of time)
- 1 large egg (50g)
- ½ cup all-purpose flour (60g)
- ½ cup grated cheese (cheddar, parmesan, or your choice) (50g)
- 3 tablespoons chopped fresh chives or green onions (30g)
- 1 teaspoon garlic powder (5g)
- Salt and pepper, to taste
- Vegetable oil (for frying, about 1-2 cups or 250-500ml, depending on your pan)
Instructions:
- If not using leftovers, boil peeled potatoes until tender, then mash until smooth.
- In a mixing bowl, stir together mashed potatoes, egg, flour, cheese, chives, garlic powder, salt, and pepper.
- Cover the bowl and chill in the fridge for at least 30 minutes to firm up.
- Once chilled, scoop out small amounts and form into patties (about 2 inches wide).
- In a frying pan, heat oil over medium heat until hot (about 350°F or 175°C).
- Gently place patties in the oil; avoid overcrowding. Fry until golden brown, about 3-4 minutes on each side.
- Remove cooked patties and place them on a paper towel-lined plate to absorb excess oil.
