Ingredients:

  • 2 cups mashed potatoes (about 500g, prepared ahead of time)
  • 1 large egg (50g)
  • ½ cup all-purpose flour (60g)
  • ½ cup grated cheese (cheddar, parmesan, or your choice) (50g)
  • 3 tablespoons chopped fresh chives or green onions (30g)
  • 1 teaspoon garlic powder (5g)
  • Salt and pepper, to taste
  • Vegetable oil (for frying, about 1-2 cups or 250-500ml, depending on your pan)

Instructions:

  1. If not using leftovers, boil peeled potatoes until tender, then mash until smooth.
  2. In a mixing bowl, stir together mashed potatoes, egg, flour, cheese, chives, garlic powder, salt, and pepper.
  3. Cover the bowl and chill in the fridge for at least 30 minutes to firm up.
  4. Once chilled, scoop out small amounts and form into patties (about 2 inches wide).
  5. In a frying pan, heat oil over medium heat until hot (about 350°F or 175°C).
  6. Gently place patties in the oil; avoid overcrowding. Fry until golden brown, about 3-4 minutes on each side.
  7. Remove cooked patties and place them on a paper towel-lined plate to absorb excess oil.
