Ingredients:
- 4 medium green tomatoes (about 1 pound / 450 grams)
- 1 cup (125 grams) all-purpose flour
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and pepper to taste
- 2 large eggs
- 1 cup (100 grams) panko breadcrumbs
- ½ teaspoon dried oregano (optional)
- Vegetable oil (enough for shallow frying, about 1 cup / 240 ml)
Instructions:
- Slice green tomatoes into 1/4-inch thick slices. Sprinkle with salt and place in a colander for 30 minutes to draw out moisture.
- In the first bowl, combine flour, paprika, garlic powder, onion powder, salt, and pepper.
- In the second bowl, whisk the eggs until well blended.
- In the third bowl, place panko breadcrumbs mixed with oregano (if using).
- Pat the sliced tomatoes dry. Dip each slice first in the flour mixture, shaking off excess, then in the egg wash, and finally coat with breadcrumbs.
- In the frying pan, pour in vegetable oil and heat over medium-high until shimmering (around 350°F / 175°C).
- Working in batches, add breaded tomato slices to the hot oil. Fry for 2-3 minutes per side until golden brown.
- Use a slotted spoon to transfer fried tomatoes to a paper towel-lined plate to drain excess oil. Serve immediately with your favorite dipping sauce.
