Ingredients:
- 4 (6-ounce) cod fillets, skinless
- 1 teaspoon salt
- 1 teaspoon black pepper
- Juice of 1 lemon
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon baking powder
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 cup cold sparkling water
- Vegetable oil for frying
Instructions:
- Rinse and pat the cod fillets dry. Season with salt, pepper, and lemon juice. Let marinate for 15 minutes.
- In a mixing bowl, combine flour, cornstarch, baking powder, garlic powder, and paprika. Whisk in cold sparkling water until smooth. Add salt and pepper to taste.
- In a large pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
- Dredge each cod fillet in the batter, allowing excess to drip off.
- Carefully lower the battered fish into the hot oil. Fry for 4-5 minutes on each side, or until golden brown and cooked through.
- Use tongs or a slotted spoon to remove the fish and transfer to a paper towel-lined baking sheet to drain excess oil. Serve hot.
