Ingredients:

  • 4 (6-ounce) cod fillets, skinless
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • Juice of 1 lemon
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 cup cold sparkling water
  • Vegetable oil for frying

Instructions:

  1. Rinse and pat the cod fillets dry. Season with salt, pepper, and lemon juice. Let marinate for 15 minutes.
  2. In a mixing bowl, combine flour, cornstarch, baking powder, garlic powder, and paprika. Whisk in cold sparkling water until smooth. Add salt and pepper to taste.
  3. In a large pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
  4. Dredge each cod fillet in the batter, allowing excess to drip off.
  5. Carefully lower the battered fish into the hot oil. Fry for 4-5 minutes on each side, or until golden brown and cooked through.
  6. Use tongs or a slotted spoon to remove the fish and transfer to a paper towel-lined baking sheet to drain excess oil. Serve hot.
