Ingredients:
- 1 slice cooked fried chicken breast, sliced into strips (approximately 150g)
- 1 bunch butterhead lettuce, washed and torn into bite-sized pieces
- 5 small cherry tomatoes, halved
- 2 tablespoons crushed peanuts
- 2 tablespoons fish sauce
- 1 teaspoon brown sugar
- 5 tablespoons kalamansi juice or lemon juice
- 1 tablespoon minced garlic
Instructions:
- Slice the leftover fried chicken breast into strips.
- In a mixing bowl, combine the fish sauce, brown sugar, kalamansi or lemon juice, and minced garlic. Whisk or stir until the brown sugar is dissolved and the mixture is well combined.
- In a large serving bowl, add the torn butterhead lettuce and halved cherry tomatoes. Pour the dressing over the salad and toss gently to coat all the ingredients.
- Place the sliced crispy chicken on top of the salad. Sprinkle crushed peanuts over the top for added crunch.
- Dish out the salad onto individual plates or serve it family-style.
