Ingredients:

  • 1 slice cooked fried chicken breast, sliced into strips (approximately 150g)
  • 1 bunch butterhead lettuce, washed and torn into bite-sized pieces
  • 5 small cherry tomatoes, halved
  • 2 tablespoons crushed peanuts
  • 2 tablespoons fish sauce
  • 1 teaspoon brown sugar
  • 5 tablespoons kalamansi juice or lemon juice
  • 1 tablespoon minced garlic

Instructions:

  1. Slice the leftover fried chicken breast into strips.
  2. In a mixing bowl, combine the fish sauce, brown sugar, kalamansi or lemon juice, and minced garlic. Whisk or stir until the brown sugar is dissolved and the mixture is well combined.
  3. In a large serving bowl, add the torn butterhead lettuce and halved cherry tomatoes. Pour the dressing over the salad and toss gently to coat all the ingredients.
  4. Place the sliced crispy chicken on top of the salad. Sprinkle crushed peanuts over the top for added crunch.
  5. Dish out the salad onto individual plates or serve it family-style.
